Raised in a family of home cooks, the curiousness and wonderment I found in food as a child evolved into passion and enthusiasm as an adult. Along with Texas’s regional cuisine, you will find hints of West Coast flavors and Central European staples. Partnering with local vendors, we feature Angus and Wagyu Beef, Specialty Cheeses, Bakery Items and Seasonal Vegetables.  We value these partnerships with local, small businesses, and these relationships have allowed us to minimize our carbon footprint and drive home the importance of “Food. Thoughtfully Sourced. Carefully Served.” which continues to be one of Hyatt’s core principals.

Award-winning all-natural cow's milk cheese from grass-fed cows that graze freely in Brazos River Valley pastures. The high butterfat content of this milk creates a rich, creamy cheese, and all hard cheese are aged in underground cheese cave.
